Sausage and Pepper Hoagies
Serves 6
Provided by Fairway Market
Ingredients:
6 hoagie rolls
6 sweet chicken sausage
6 spicy chicken sausage
12 red cherry peppers, halved with seeds taken out
6 greend jalepenos, halved with seeds taken out
6 red jalepenos, halved with seeds taken out
6 serrano peppers, split in half length-wise with the seeds taken out
3 poblano peppers, quartered with seeds taken out
1 red bell peppers, cut in eigths with the seeds taken out
1 green bell peppers, cut in eigths with the seeds taken out
6 cloves garlic, crushed in skin
2 spanish onions, quartered
1/8 cup olive oil
salt to taste
pepper to taste
Instructions:
Preheat your oven to 450 degrees. Place the sausage on a roasting pan and drizzle with olive oil. Place in the oven and roast for 15-20 minutes.
In a large bowl mix the peppers, onions, garlic, olive oil, salt and pepper and set aside.
Take the sausage out of the oven, place in a bowl and set aside. Place the pepper and onion mixture on the same pan you used for the sausage and roast for 20-25 minutes or until charred.
Take the pan out of the oven, and add the sausage to the pepper and onion mixture and roast for 5 more minutes. Remove from the oven and serve two sausages per hoagie roll.
